The Bianchetto Truffle (Tuber borchii) is the smaller, lesser known cousin of the famous White Winter Truffle. It is in season from late January to early April and is smaller and more irregularly shaped than most truffles. It's aroma is a bit more pungent, earthy, and even a bit garlicky. Use shaved with sharp cheese, game meat dishes, or cream-based pastas.
