This is a soy sauce that, while having a lot of the traditional, umami-driven characteristics of a soy sauce, contains sweet, maple and coffee notes that really distinguish it from your run-of-the-mill table soy sauce. Brewed with foraged candy cap and pheasant back mushrooms, organic black soy beans and heirloom grains grown along the eastern shore of Maryland, this is an excellent substitute for more traditional soy sauces, great for glazing and dipping, and works wonderfully in stir fries, as part of a vinaigrette, with grains, and more!
