Udo is one of the most prized and sought after sansai vegetables used in Japanese cuisine during the spring season. These are almost always foraged from the wild, but if you don’t happen to have them growing on a nearby mountain near you do not worry as we have done the difficult part of taking our time growing Udo in our forest nursery to now have this unique mountain vegetable available for you to transplant into your shade garden. Each spring season you will begin to see your precious Udo emerging from the forest floor as a true taste of spring and over time creating its own patch which will grow for many years to come.

My name is Sergio and have been working in the restaurant kitchen world for over ten years, feel very passionate about what I grow and am very excited to showcase our high quality foods to arrive directly to your door. We are always exploring different ways to restore our forest ecosystem, build soil, and preserve water quality while producing food, medicine and materials. We help steward 40 acres of preserved land and are actively creating a forest nursery, operate multiple food production sites including our log cultivated mushroom yard and many sansai vegetables which we grow under the forest canopy.
