This ensemble features five cheeses, each representing a distinct style. The specific cheeses will change occasionally according to season and what we think is tasting best at the moment, but it will always include a bloomy rind, a washed rind, a cheddar, a blue, and a mountain-style cheese.

This collection ships FREE. Order by Monday for delivery by Friday of the same week. Any orders placed from Tuesday on ship to arrive on Thursday or Friday of the following week. All of our collections ship within a beautiful blue, recyclable, gift box padded with natural wood shavings. Cheese arrival at room temp is a-ok; pop 'em in the fridge and bring back to room temp before enjoyment.


Willoughby (8-ounce wheel) — A pudgy, buttery washed-rind round with notes of boozy fruit & roasted meat.Whitney (6 oz wedge) — A semi-firm, raw milk washed rind cheese based on a Swiss ‘raclette’ recipe made from a blend of goat and cow milk by Jasper Hill Creamery. Sweet and smooth, with warm nutty notes and a hint of fruity funk.Bayley Hazen Blue (8 oz wedge) - A complex raw milk blue, with a dense fudgy texture, brimming with sweet cream & herbaceous notes of anise and spice.Cabot Clothbound Cheddar (6 oz. wedge) — An approachable but complex natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy, with caramel sweetness to the finish. Harbison (9 oz. wheel) — Harbison is a soft-ripened cheese with a rustic, bloomy rind, made by Jasper Hill Farm. Young cheeses are wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the farm's woodlands. Harbison is woodsy and sweet, balanced with lemon, mustard, and vegetal flavors. There is a natural blue green flora present on the spruce cambium.
