Its meaty texture is a great vegetarian/vegan substitute for meat in almost any meal. The strong, earthy flavor of maitake is rivaled only by the mighty morel mushroom. Aside from the culinary qualities, this fungus contains high levels of vitamin D, niacin, riboflavin, and potassium. It also lowers blood sugar and bolsters the immune system.

The cauliflower mushroom is a rare treat. In Western North Carolina, their season is from June to October. It is rich in anti-properties, such as anti-tumor, anti-microbial, and anti-fungal—facts borne from extensive research done in the last 15 years. Packed with nutrients that improve the immune system and promote skin health, the cauliflower also has been shown to reduce the risk of strokes. The Black Staining Polypore is also known as Rooster of the woods, cousin of both Chicken and Hen of the woods. It can be found at the base of hardwoods from May through October in the Southeastern United States. It contains methanol extract, which is very aggressive at fighting certain types of cancer. This polypore also is rich in vitamins and nutrients which lower blood pressure, lower cholesterol, help with digestion, and is rich in vitamin D.

The common name of Hoof mushroom is how most people identify what is properly known as Phellinus linteus. It can be found on dead or dying birch and beech trees in elevations above 3500 feet. Oftentimes it is overlooked for the more well-known medicinal fungi. Chinese culture has been using this "hoof looking" mushroom for centuries, the main usage is for its immunity boosting properties. Hoof mushrooms has many other benefits, such as polysaccharides and beta-glucans, both at levels which offer an array of benefits. Lowering blood pressure, lowering cholesterol, and anti-inflammatory properties as well.

This blend is a double extracted tincture of Chaga, Reishi, and Turkey Tail mushrooms. All of these have properties which improve immune function. Turkey Tail has been known to help with specific types of cancer. Reishi and Chaga have been used for centuries in other cultures for their medicinal value. All are great as antioxidants, lower blood pressure and cholesterol, and increase vitality. A friend and I came up with this idea for a blend after getting feedback from customers' taking one or more of these three tinctures. Creating the blend allows for a broader spectrum of benefits at about the same price as a single tincture of one of these fungi.

This tincture is a blend of three fungi which all have cognitive benefits. Better focus, increased energy, reduction of anxiety, improvements in memory, diminishing of dementia effects, and lessening of depression symptoms are all possible with this blend of Lions Mane, Cordyceps, and Maitake. This blend was born from customers' own accounts of favorable benefits in taking one or more of the individual mushroom tinctures. A business friend and I, over a few years, came up with the idea of a blend.

Cordyceps have been highly underappreciated, as other fungi have taken the spotlight. The more research I have done, the more I am convinced that this little guy has most of the properties I seek in better known mushrooms. Two of the biggest properties are the ability to slow the aging process, and disease prevention. Other benefits are anti-inflammatory properties, specifically for the heart, and based on research, a marked improvement in men's sexual dysfunction. Birch Polypore has been used for at least 5000 years as a medicine. German hikers in 1991 stumbled onto a frozen, mummified man, dated at 5000 years old, he was wearing a birch polypore around his neck. Examination of this man identified a type of gastrointestinal bacteria, that can be treated with birch polypore. The Black Trumpet mushroom is in the Chanterelle family. Some consider it to be the best Chanterelle because of its aroma and wonderful flavor. Western North Carolina has a climate which is conducive to Black Trumpet flushes.
