A seasonal delicacy, fiddle heads cook similarly to asparagus with the caveat that they must be fully cooked. blanching or steaming prior to roasting or frying is a great way to keep the color and caramelize the skin without having to risk exposure to pathogens that may come from a wild foraged fern.

Roots

Fresh live burdock root harvested from orchard and pasture that has lapsed organic certification but is still managed without chemicals. Second year plants are harvested in the spring and first year plants are harvested in the fall. The spring season ends as the plants start to bolt and the root becomes woody. one or two (small) leaves may be included on each root, as the root is scaled generously for imperfections.

Delaware - A luscious meaty bird, the delaware was the primary chicken used in the US prior to the 1950's. Rich in flavor and texture this is a large chicken, raised to 18 weeks and suitable for a 5-6 person meal 

American bresse x delaware - A hybrid between the delaware and American bresse. combining the best of both worlds, delicate bones and meaty structure, white feathers and large frame. We are the only breeder in the world to produce this hybrid.

American Bresse - This breed of chicken, boasting a 500 year pedigree, originating in France, and in part because of the fat marbling in the meat, is considered the best breed of chicken. The A. bresse has delicate bones, and white feathers. It is on the smaller side, so ideal for a 2-3 person meal. 

Three breeds of bird raised together on organic grain and organic pasture and separated for butchering so you can decide for yourself purely based on genetics which bird you love the most!

These are the male co-parts to blue/green egg laying hens.
We raise them to the same standard as our premium Delaware and American Bresse breeds(we actually raise them all together in the same pen). Because these birds do not have the same meat characteristics as those purebreds and the Del x Bresse hybrid, we pass them along at a discount. Generally recommended as soup birds though they do have similar whole leg cuts to the A. bresse.
