Yaupon Holly also known as Llex Vomitoria is indigenous to the southeastern United Sates.  Its is the only natural source of caffeine native to America, by weight the leaves contain more caffeine than coffee and green tea..  It delivers a jitter free experience, while being an environmentally friendly option as compared to coffee.  Yaupon contains three primary stimulates caffeine, theobromine, and theophylline.   Yaupon Holly has a mellow flavor with hints of vanilla. The leaves are lightly fire roasted to give our consumers the option for a darker brew.  Yaupon contains powerful polyphenols (rutin, chlorogenic acid, criptochlorogenic acid) they play a key roll in preventing chronic conditions such a heart dieses cancer and diabetes.

Horse Sugar also known as Symplocos Tinctoria is a deciduous or weekly ever green that grows as a shrub or small tree.  The leaves have a sweet sour apple flavor with bitter back notes perfect for tarts pies or cakes.

Persea Palustris (Swamp Bay) is an indigenous alternative to the classic Bay Leaf.  Early Natives and Creole peoples foraged and used the Swamp Bay to create the Cajun cuisine we know today.  
The flavor profile is much more robust and aromatic compared to the classic bay leaf, when steeped in dishes they release a spicy aroma comparable to a floral fragrance. 
Fresh, mature leaves are used to treat blood dysentery, inflammation, and congestion of kidney.
