But we’re not resting on our laurels to run a company. We started a company to be the catalyst for an industry. Harvested from dog/handler teams throughout Europe, Tuber aestivum are the most subtle and delicate of truffle species. Aromatics evoke the forest with rich nutty and rounded mushroom characteristics. We have two fresh shipments arrive every week to ensure the freshest quality. Currently sourcing from Umbria, Abruzzo, and Tuscany, Italy.

Black Summer Truffles (Tuber aestivum)

Fresh, wild porcini mushrooms from Washington and Oregon, commonly called King Boletes, Spring Kings, and Boletus rex-veris. They are meaty and plump in texture, and prized by chefs for their rich umami flavor. Store in a paper bag in the fridge for up to 10 days. We ship all orders once a week, immediately after receiving product from our foragers. We do not stock perishables, instead we forage to order, ensuring you get the absolute freshest product possible. If ordering for an event or specific date, message us and we can work with you.

Fresh Wild Porcini (PNW)

Dried burn morels from Washington, Oregon and Idaho's wildfire zones. A mix of greys, blacks, and blondes, these are some of the first signs of life to sprout after the snow melts on a wildfire burn scar. They are meaty and firm in texture, and plump but not overly moist. Morels are dried in small batches, at the peak of their freshness. It takes approximately 6 - 7 lbs of fresh morels to get one lb of dried morels. Store in a cool, dry place. To rehydrate: soak in room temp water for 20 mins. Be sure to save the steeped morel water for sauces and broths!

Dried Burn Morels (PNW/Idaho)

Tuber oregonense and tuber gibbosum |&nbsp;There are two species of white truffle found in the Pacific Northwest, commonly called Oregon white truffles. Tuber oregonense (winter white truffle) is the more prevalent of the two and has a similar appearance to the Italian white, with a smooth pale brown and reddish surface and a gleba of brown with white veins. It has a strong raw garlic and nutty cheese aroma, with hints of sweetness, cedar, cinnamon, and vanilla, with the classic truffle undertone of wet forest floor. The tuber gibbosum (spring white truffle) is similar to the Oregon winter white truffle, with a complex garlic and spice aroma, but the surface is brownish yellow with darker brown patches. Winter white is found October through March, and the spring white is found May through July.Store wrapped in a dry paper towel in a tupperware or in dry rice in the fridge for up to 7 days.&nbsp;We ship all orders once a week, immediately after receiving product from our foragers. Fresh PNW White Truffle

Though there are multiple species of Oregon black truffles, leucangium carthusianum is the most common, found in both Oregon and Washington. Harvested late autumn into spring by highly trained dogs, they have a fruity-musky aroma, markedly different from the Perigord black. Aroma of underripe pineapple, green apple, blueberry, and Amarena cherry, with an undertone of nuttiness and wet forest floor. Has a texture of moist Parmesan and fresh almond. The exterior is a smooth but warty black and the gleba is grey to grey green. Season is typically December through March, although we get some of our best harvests through June, depending on the bounty of the year. Store wrapped in a dry paper towel in a tupperware or in dry rice in the fridge for up to 7 days. We ship all orders once a week, immediately after receiving product from our foragers.
