Chokecherry Uses & History (from Wikipedia): 
For many Native American tribes of the Northern Rockies, Northern Plains, and boreal forest region of Canada and the United States, chokecherries are the most important fruit in their traditional diets and are part of pemmican, a staple traditional food. The chokecherry fruit can be used to make jam or syrup, but the bitter nature of the fruit requires sugar to sweeten the preserves. Sacagawea was eating choke cherries when she was discovered by Lewis and Clark. The Plains Indians pound up the whole fruits—including the toxic pits—into a mortar, from which they made sun-baked cakes. The stone of the fruit is poisonous. In 2007, Governor John Hoeven signed a bill naming the chokecherry the official fruit of the state of North Dakota, in part because its remains have been found at more archeological sites in the Dakotas than anywhere else. Chokecherry is also used to craft wine in the western United States, mainly in the Dakotas and Utah, as well as in Manitoba, Canada.

There is very little bark or woody substance, other than what is found between the needles in the needle clusters.&nbsp;The Juniper trees that grow native in&nbsp;Colorado&nbsp;are called&nbsp;Rocky Mountain Juniper&nbsp;(Juniperus&nbsp;scopulorum), which have very small berries&nbsp;that mature every 18-36 months. We have found in all of our research and with our own experimentation at our brewery that when using Rocky Mountain Juniper that you can use both the berries and the needles together to produce the same results&nbsp;as if you only used just berries in the brew.&nbsp;Recommended usage for brewing is normally around a quarter of a pound per barrel for Winter Ales, a little less for lighter beers. Making gin? Distillers - we are having a lot of success using the juniper needles for gin botanicals.&nbsp;This is a great way to use fresh juniper that has never been dried and actually wild harvested in America, not from over seas!Other Uses&nbsp;– Food &amp; Medicine: Juniper has been documented being used in beverages and tonics since as early as the thirteenth century, where it was said to boil the berries in rainwater to treat stomach pain.&nbsp;Some&nbsp;Plateau Indian&nbsp;tribes boiled an infusion from the needles and inner bark to treat&nbsp;coughs&nbsp;and&nbsp;fevers. The berries were also sometimes boiled into a drink used as a&nbsp;laxative&nbsp;and to treat&nbsp;colds.&nbsp;About the Juniper Trees:&nbsp;Juniperus scopulorum&nbsp;(Rocky Mountain juniper)&nbsp;is a species of juniper native to western North America,&nbsp;in Canada&nbsp;in British&nbsp;Columbia&nbsp;and southwest Alberta, in the United States&nbsp;from Washington&nbsp;east to North Dakota, south to Arizona&nbsp;and also locally western Texas, and northernmost Mexico&nbsp;from Sonora&nbsp;east to Coahuila. It grows at altitudes of 1,600–8,900&nbsp;ft on dry soils, often together with other&nbsp;juniper&nbsp;species.&nbsp;"Scopulorum" means "of the mountains”. Juniper is a member of the ancient cypress family. The trees are dioecious, meaning there are both male and female trees. The berries contain&nbsp;α-pinene&nbsp;which imparts a pine or rosemary flavor.&nbsp;

About the Fir Trees: 
There are many fir species out there that have been used for centuries. We primarily harvest White Fir and Douglas Fir found in Southwest Colorado. Our packages include a mix of both, but they are primarily White Fir. Fir is high in vitamin C and has long been used for teas, tinctures and respiratory support. The needles contain a wide variety of monoterpenes such as α-pinene, β-pinene, limonene, myrcene, camphene, Δ3-carene, and terpinolene, as well as monoterpene alcohols such as α-terpineol, terpinen-4-ol, linalool, citronellol, and fenchyl alcohol. Other Douglas fir constituents include esters and aldehydes. It also offers anti-inflammatory, antiseptic, antimicrobial (bacterial, viral and fungal), expectorant, and sedative properties. 

Typically fir has more tannic properties than spruce, so depending on what you are making, often honey or other sweetness is preferred to balance the flavors. In brewing, this is why spruce is typically preferred as there is much less pitch carrying the tannins than you find in fir. That said, you can still brew up some pretty amazing recipes! Fir is typically considered more "piney" than spruce. Think pine/citrus with fir, where you get more gentle pine/melon with spruce. If you tried brewing with our spruce and it was too 'melony' for you, try kicking up the dankness of your next brew with some fir tips!

About the Spruce Trees: 
Colorado Blue Spruce (Picea pungens) – Native to Colorado. 150-200 years (though some can reach 600 years). Medium to high elevations. The state tree of Colorado. Also known as Blue Spruce or Silver Spruce. 
Engelmann Spruce (Picea engelmannii) – Native to Colorado. 250-500 years. Medium to high elevations. One of the taller of the high elevation conifers. They can survive in cold temperatures and deep snow pack at timberline (normally around 11,500 ft. around these parts). Produces cones at 25-50 years. 

In brewing, spruce can be added at all stages of the brew from the hot side to the cold side. Depending on what you are trying to achieve, we have different recommendations on the amount to be used. Feel free to contact us for those recommendations or check out our Recipes & More page. The flavor characteristic of spruce is typically described as piney up front when the beer is young, and then after a few weeks as it ages it will turn more melon flavored. If you are looking for something more dank you might consider using our Fir Tips.

Other Uses – Food & Medicine - The leaves and branches, or the essential oils, can be used to brew spruce beer! (Go figure…) Also, the tips from the needles can be used to make spruce tip syrup. Native Americans in New England used the sap to make a gum which was used for various reasons, and which was the basis of the first commercial production of chewing gum. In survival situations spruce needles can be directly ingested or boiled into a tea. This replaces large amounts of vitamin C. Also, water is stored in a spruce's needles, providing an alternative means of hydration. Spruce tip tea has long been used by indigenous peoples to soothe coughs and sore throats, and to alleviate lung congestion. Reports say that spruce can be used as a preventative measure for scurvy in an environment where meat is the only prominent food source. Although there are many known uses for spruce, always consult a tree-eating expert before scarfing down wicked huge helpings of pine.
