Chicken of the woods butter! Fresh wild harvested chicken of the woods sautéed and whipped into organic grass fed butter. Lemony and oaky, this butter is great on sourdough, in veggie roasts or on seafood, and in a gravy.

Wild harvested black trumpet mushrooms sautéed and then whipped into organic grass fed butter. This compound butter is great on roasted veggies, steaks, seafood, soups, or just some good fresh baked sourdough.

Black Garlic is an amazingly tasty and equally good for you super food. We take organic garlic and turn it into black garlic with our black garlic fermenters, and then whip fresh cloves into organic grass fed butter. The result is a lovely dark brown butter flecked with chunks of black garlic. It goes amazing well on steaks, veggies, fresh breads, even deserts!

Deep in the forest we found an amazing flush of Lactifluus corrugus, or the corrugated milk cap. We took these home, smoked, marinaded, and dehydrated them into this beautiful tasty vegan mushroom jerky. Great alone as a hiking snack, or also wonderful added to salads or used to flavor batches of rice.

Truffles

Indulge in the complex flavors of our Appalachian region with our wild harvested Blue Ridge Truffles. Foraged around Asheville, NC, with the help of two Italian truffle dogs, these gems of the fungal kingdom add time bending dimension and flavor to any culinary experience. After bringing the truffles home and sorting and cleaning, we thin slice them and prepare them for the freeze drying process. 

The Imaia gigantea truffle has only been found in the Appalachian Mountains and Japan, and has never successfully been cultivated. We go deep into pristine mountain environments to find these, and only harvest the ripe truffles that the dogs help us find.

Freeze drying truffles preserves the volatile organic compounds - organoleptic characteristics  and lengthens the shelf life.

To cook with these, use them as you would a fresh truffle. Add to hot dishes and wait 2-3 minutes for the steam to rehydrate and release the flavors. 

this 2.8 gram jar equals approximately one oz of fresh truffle.

Most people hunting these in the wild are using their finds to inoculate truffle trees for cultivation. Hopefully soon they will be available for eating.

We've trained our dog Eva,&nbsp;a Lagotto Romangolo, to be a truffle hunting dog, starting&nbsp;in the Western North Carolina region. This year is her second truffle season and we are having so much fun finding truffles together.
