The syrup is thick and rich with the taste of forests in the winter (think Christmas trees) and notes of citrus (maybe because it's so high in vitamin c). For each product purchased, a tree will be planted.
Three ingredients only! This product is made using fresh spruce tips. Those are those little bright green new shoots that the spruce trees put out to grow bigger. I then add dark brown sugar and ferment the spruce tips and sugar on my sunny ledge. These have been aged three to five months then boiled together to create a thick, luscious syrup, a little water to prevent crystallization ~ and that's it - the only ingredients are spruce tips (removed after boiling), water, and brown sugar!

A lot of "spruce syrups" on the market are called "simple sugars" because they're primarily made by boiling water and sugar and infusing the spruce tip flavor in that. This syrup is much different and closer to the traditional method where the spruce tips gradually release their very own moisture with little water added but a lot of patience needed! It has a luscious, thick texture.
