Black Locust Tree (Robinia pseudoacacia) also known as false acacia or yellow locust) are often large trees, which makes foraging the blossoms in quantity even more rare. These are highly seasonal and perfumed blossoms, which hang in small bunches like grapes on the vine.

In cuisine, a popular use is dipping clusters in batter and frying until golden, or tossed into salads for a sweet, floral note.
Blossoms can be steeped to create aromatic syrups, jellies, cocktails or infused into dairy for desserts often described as having a fruity, grape-like flavor.

Dried flowers can be used in teas, though some find the taste less appealing than fresh.

In traditional herbalism, they are sometimes used for their purported anti-spasmodic or diuretic properties.

Predominantly foraged, I focus on offering unusual, and wildly delicious foodstuffs for regional chefs and restaurants. Collaboration is essential to the work, outside of foraging and sharing knowledge, I am interested in product development, and alternative applications of biomimetics. As a vendor with Foraged Market, I hope to reach a wider audience, exciting more minds and mouths with nutritionally dense wild food products. The majority of items will be sourced in the forests and hillsides of the Ohio River Valley. However, when indicated, certain items have been successfully wild-grown in my organic, vegan, urban garden to offer a greater variety.
