Another fantastic autumn mushroom! Foxy bolete grow late summer through fall up here in the North Woods, typically 3-5 days after a good soaking rain. These bolete grow quickly into large, beautiful mushrooms. Unlike some bolete, the foxy have a meaty stem as well as the cap. So you will find large pieces of dried mushrooms in the lots that arrive.

For those who have never had the pleasure, foxy bolete are a mild flavor mushroom. The smell is very light and slightly sweet when cooked. These mushrooms are excellent paired with rice or served as sides for chops and steaks.

When harvested the caps are orange and the stems are white. During the dehydration process the caps darken and the stems crisp to a light brown, gray, and white combination. When you cook these mushrooms the color will change again. The stems get very dark, and the caps turn from a dark orange to a reddish brown color.
