Maitake / Hen of the Woods is a meaty, delicious mushroom of spoon-shaped caps with whitish pores and lateral stalks branching out from a fleshy, compound base; there are variations in color from white to grey to light brown or dark brown depending on the specific mushroom.
Maitake retains good flavor when dried, is excellent in soups, sauces and stews, and can be used to make tea. Maitake is widely believed to have medicinal properties and contains chemicals that might help fight tumors, stimulate the immune system and lower blood sugar levels.
