UNSUNG HERO OF WILD MUSHROOMS! DEEEELISH

Tasty for broth, which is great, because I recommend boiling first, then dredging and frying for the tender edges. So you get two uses in one. The bulk of this mushroom is too touch to sautee and eat. This is a flavor maker. Or for finding new uses. Jerky maybe? Ground turkey substitute. You tell us! Also excellent for dried mushroom powder. So flavorful!

As the name states, they look bruised and beat up soon after harvesting, but don't let their appearance fool you, honestly these are often as good if not better than chicken of the woods! trust me.

Mad for Mushrooms is dedicated to the proliferation and learning of wild foods and natural ecosystems. Predominantly foraged, I focus on offering unusual, and wildly delicious foodstuffs for regional chefs and restaurants. The majority of items will be sourced in the forests and hillsides of the Ohio River Valley. However, when indicated, certain items have been successfully wild-grown in my organic, vegan, urban garden to offer a greater variety.
