Fresh, salt-water oysters. Maine naturally has higher salinity in the Gulf of Maine than other parts of the world. This imparts a delicious and satisfying saltiness, no matter which variety you can get your hands on. Almost all oysters farmed in Maine are kept in floating cages. This keeps the farmers able to tend to them year round (even when the temperature drops). It also keeps the oyster's belly clean from dirt and sand. No grit. Depending on the season, Maine oysters are typically briny, salty, fatty, creamy, sweet and umami.
