If eating Sunchokes, place in refrigerator wrapped in a damp paper towel in a paper bag. 2–4-week shelf life. These do not store like a potato and will shrivel up. If planting, store like dug flower bulbs to plant next spring. They are happiest in dirt, sand, peat, in a bucket or box right above freezing. Once planted, you never have to dig again unless you want a snack.
