We love ramps in everything for the short window we have access to them, before the forest trees leaf out. The window for ramps varies a bit year to year, but usually it's late April or early May. Get on the preorder to receive 2 lbs (approx 60 ramps ) of fresh cleaned whole ramps shipped to your door right after they are picked! Ramps are deliciously pungent with a special garlic, onion and woodsey flavor. Use the whole plant, cooked or raw, it's all infused with this incredible flavor. Save and plant the bottom roots near a deciduous tree to try your hand at starting your own patch. Try making the spring classic Ramp Dip- thinly sliced ramps, sour cream, mayo, salt and pepper. Ramps are also a killer ravioli filling, with nettles & a little sheep milk ricotta? YESSSS.
We are very careful about managing our ramp patches, never taking more than 20% from any cluster. This ensures these plants can continue to flourish and bring us their incredible umami flavors from the woods. We also have been planting new patches every year on our farm and are excited to watch how they develop over the years.
