Hyssop is a neat herb in the mint family. It's often used to make a soothing tea, but it has had it's place in many foods including a version of Zaatar. Honeybees and other pollinators can't get enough of the blue/purple blossoms. In the Middle Ages, hyssop was a stewing herb. Its modern uses are for flavoring meats, fish, vegetables, salads, sweets, and such liqueurs as absinthe.
