The Pine Mushroom (Tricholoma murillianum), also known as Matsutake, Sonrong or Songi, is most famously consumed in Japan but is growing in demand across kitchens in North America. Their spicy flavour and meaty texture lends well in myriad of recipes. Less is more when cooking with these revered fungi.
