If you’ve never had the pleasure of fresh Chicken of the Woods (Laetiporus sulphureus), you’re in for a real treat. Chicken of the Woods is a gorgeous polypore that grows directly on hardwoods. The top of the bracket is generally a shade of orange, and the margin and underside will be a sulphury yellowish-to-white color. The smell is intoxicatingly earthy and sweet.

Chicken of the Woods earns its name by its striking flavor and texture resemblance to chicken. You’ll be absolutely blown away by how “un-mushroomy” the flavor and texture is. Some of our dinner guests have double-checked that our dishes did not contain actual chicken!
