How to Rehydrate
Place the dried mushrooms in a bowl and cover with hot water. Let them soak for fifteen to twenty minutes until fully softened. Lift the mushrooms out of the soaking liquid and set aside. Strain and reserve the soaking liquid to use as a flavorful mushroom broth for cooking.
Simple Black Trumpet Mushroom Risotto
This risotto highlights the natural depth of wild black trumpet mushrooms and is well suited for a slow, comforting meal.
Ingredients
Rehydrated black trumpet mushrooms, sliced
One cup arborio rice
Two tablespoons butter or olive oil
One small onion or shallot, finely chopped
One clove garlic, minced
Four to five cups warm mushroom soaking liquid or broth
Half cup dry white wine
Salt and black pepper to taste
Optional additions include grated parmesan, fresh herbs, or a drizzle of olive oil
Instructions: Heat butter or oil in a pan over medium heat. Add onion and cook until soft, then add garlic and sliced mushrooms and cook briefly until fragrant. Stir in the rice and cook for one minute to coat. Add wine and let it cook down. Begin adding warm broth one ladle at a time, stirring often, allowing it to absorb before adding more. Continue until the rice is tender and creamy. Season to taste and finish with cheese or herbs.
Storage
Store sealed packets in a cool, dry place away from light. Once opened, keep mushrooms in an airtight container. Dried mushrooms may also be frozen for long term storage.
