Horse Sugar also known as Symplocos Tinctoria is a deciduous or weekly ever green that grows as a shrub or small tree. The leaves have a sweet sour apple flavor with bitter back notes perfect for tarts pies or cakes.
The leaves can be used to produce a natural yellow die for food coloring, dying fabrics, or making homemade pigments. Horse Sugar can also be used as a tonic to reduce fever.
