The young leaves can be consumed raw or cooked. Stinging nettles are highly nutritious, containing vitamins A,C,K several B vitamins and minerals. They can be dried for use throughout the year, try adding to stews and soups.

Nettle Pesto: Black 3 cups of nettles. Add 1 garlic clove, 3 cups of parsley or other wild green, 1/3 cup of pine nuts, 1/2 cup parmesan cheese. Season and blend while drizzling 1/3 cup olive oil.
