Persea Palustris (Swamp Bay) is an indigenous alternative to the classic Bay Leaf. Early Natives and Creole peoples foraged and used the Swamp Bay to create the Cajun cuisine we know today.
The flavor profile is much more robust and aromatic compared to the classic bay leaf, when steeped in dishes they release a spicy aroma comparable to a floral fragrance.
