Black Pepper Huckleberry Jam

What do Huckleberries Taste Like?
The term “huckleberry” can refer to a few different species of berries, which will vary slightly in flavor. Generally speaking, they’re a lot like blueberries, but with a little less of the sweet-floral flavors. We like huckleberries because they offer a wide range of culinary applications, easily becoming sweet, sour, or savory in different dishes.
This Recipe Calls for Foraged Spices
We really like the addition of juniper and sweet fern in this jam – but they’re totally optional. Feel free to play with the spices and herbs used here. We think wild mint, beach rose, or birch would be great pairings – but you can just as easily stick to the berries, salt, sugar, and pepper and still get a great jam!

Savory Huckleberry Jam
Equipment
- 1 small sauce pot
Materials
- 2 cups frozen huckleberries
- 1/3 cup sugar
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/2 tsp ground sweetfern leaves [optional]
- 2 juniper berries, crushed [optional]
Instructions
- Add all ingredients to a small sauce pot set over medium heat. cook until the mixture has reduced and flavors have melded, about 30min. Transfer to jars and cool.
