Hominy - Pašdáyapi

Pašdáyapi is made by using wood ash to bring the corn through the process called nixtamalization. This process removes the outer hull of the corn, awakening the flavor, transforming the color, and releasing the full nutritional potential of the corn. This corn can also be ground for grits, cornmeal, and masa.

Soak overnight for best results, changing water at least once. Cook thoroughly.
