We believe this tastes best using an overnight soak method. This hominy can be ground for cornmeal, grits, and masa.
Soak overnight for best results, changing water at least once. Cook thoroughly.
Corn soup recipe
1 cup dried hominy, soaked overnight
1 cup dried meat, torn into bitesize pieces (or fresh cubed stew meat)
1 cup diced salt pork (or salt to taste at the end)
1 tsp ground black pepper
1 cup dried wild turnips
Fresh veg additions of choice
8 cups water or broth
Add all ingredients to a slow cooker (4 hrs high/6 low) or pot, simmering on medium until hominy is tender (1-2 hrs). If using fresh vegetables, add them in during the last 15 minutes.
