- 2 oz Wild Foraged Dry Mushrooms – Chicken of the Woods (from Foraged)
- 1 oz Maitake mushrooms
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 2 potatoes, diced
- 1 teaspoon Porcini Umami Spice Blend (from Foraged)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped, for garnish

Preparation:

Step 1 - Rehydrate Mushrooms
