INGREDIENTS:

- 1 grill or grill pan
- 1 heavy cast iron or weight
- 1/2 lb Chicken of the Woods Mushrooms
- 1.5 tbsp Butter or Olive oil
- Salt, to taste

Preparation:

Step 1 - Place COWs on preheated grill or grill pan

1. Preheat your grill (or grill pan set over a stove) to medium heat. Add Chicken of the Woods mushrooms to the grill, arranging so they do not overlap.

Cover mushrooms with a heavy pan and grill until the undersides take on deeply charred grill marks, 6-8min.

4. Remove the heavy pan, and brush the mushrooms all over with butter or olive oil, adding more as needed. Sprinkle with salt to taste. Serve warm with your favorite sauce.

Does Chicken of the Woods Taste like Chicken?

We know, we know – people say everything that’s a little savory tastes like chicken. But in this case, it really does! Chicken of the Woods Mushrooms (Laetiporus genus) have a chicken-y mushroom flavor, but even more so: they have a chicken-y texture! For best flavor and mouthfeel, you’ll want to use the youngest COWs you can find, when they’re the most juicy and flavorful.

When is Chicken of the Woods in Season?

Chicken of the Woods has a long season for mushrooms: It can be found from Spring through Fall, depending on the region and the year’s rainfall. You’re most likely to find fresh COWs in mid-Summer, but thankfully you can find them dried year round. Dried COWs have all the same flavor, and rehydrate really well. For this easy recipe, fresh is best, but you can also use the rehydrated mushrooms year round!
