Wild harvested in Oregon
Due to their growing environment, the moisture content of your chanterelles may vary. Some may be wetter, especially if there's rain on the coast, while others may be drier, depending on the coastal conditions. As a result, we encounter fluctuations from day to day, and currently, the chanterelles may appear brown around the edges and not visually perfect. Nevertheless, rest assured, they still possess a wonderful taste!

Typically, starting from mid-November, chanterelles tend to be wet, and there's little we can do to prevent this. We strongly advise against washing the chanterelles, as they absorb water easily and may become waterlogged. Instead, use a soft brush to gently remove any debris from your chanterelles.

As the chanterelles grow larger, they become more brittle, leading to some breakage during transit. Although we strive to minimize breakage, it's challenging to prevent entirely.
The chanterelles will be damp beginning usually by mid- November. 

Upon receiving your mushrooms, ensure to place them in the refrigerator promptly. If the moisture content is high, you can wrap the chanterelles in paper towels and then in a hand towel to absorb any excess moisture. The shelf life of chanterelles is approximately 5-7 days. Be vigilant and check them daily, as if one mushroom goes bad, it can quickly affect the others. Signs of spoilage include browning or sliminess; please note that sliminess differs from natural wetness. Additionally, watch out for any mold growth, which will be evident through black spots or green mold. In such cases, be sure to discard the affected mushroom immediately.

How I Harvest:
Gathered by hand from subtidal ledges and rocky points, each piece of Norwegian Kelp is selected for quality, color, and firmness. As a lifelong Cape Cod fisherman and forager, I harvest only mature fronds and leave the holdfast intact — ensuring healthy regrowth and a thriving nearshore ecosystem.

This is a freshly harvested, then immediately frozen vacuum-packed bag of juniper needles with berries.&nbsp;They are NOT dehydrated - they are fresh and sustainably wild-harvested in the USA (unlike most juniper products on the market)!

SHIPPING OPTIONS - Foraged currently only allows Overnight shipping. Unfortunately we are so remote that our shipping providers do not offer overnight shipping. That said, our products will ship to you via UPS 2nd Day Air and we will refund you the difference.

SHIPPING DAYS - We normally only ship on Mondays. Most of our products ship frozen and we do not want to risk the order sitting in a hot warehouse over the weekend and getting ruined. Orders need to be received by Sunday, noon Mountain time to ship that same week.

This is a mix of both the berries and the needles of the tree. There is very little bark or woody substance, other than what is found between the needles in the needle clusters. The Juniper trees that grow native in Colorado are called Rocky Mountain Juniper (Juniperus scopulorum), which have very small berries that mature every 18-36 months. We have found in all of our research and with our own experimentation at our brewery that when using Rocky Mountain Juniper that you can use both the berries and the needles together to produce the same results as if you only used just berries in the brew. 

Recommended usage for brewing is normally around a quarter of a pound per barrel for Winter Ales, a little less for lighter beers. Making gin? Distillers - we are having a lot of success using the juniper needles for gin botanicals. This is a great way to use fresh juniper that has never been dried and actually wild harvested in America, not from over seas!

Other Uses – Food & Medicine: Juniper has been documented being used in beverages and tonics since as early as the thirteenth century, where it was said to boil the berries in rainwater to treat stomach pain. Some Plateau Indian tribes boiled an infusion from the needles and inner bark to treat coughs and fevers. The berries were also sometimes boiled into a drink used as a laxative and to treat colds. 

About the Juniper Trees: Juniperus scopulorum (Rocky Mountain juniper) is a species of juniper native to western North America, in Canada in British Columbia and southwest Alberta, in the United States from Washington east to North Dakota, south to Arizona and also locally western Texas, and northernmost Mexico from Sonora east to Coahuila. It grows at altitudes of 1,600–8,900 ft on dry soils, often together with other juniper species. "Scopulorum" means "of the mountains”. Juniper is a member of the ancient cypress family. The trees are dioecious, meaning there are both male and female trees. The berries contain α-pinene which imparts a pine or rosemary flavor.

Frozen Huckleberries are a delightful treat with their sweet and tart flavor, resembling blueberries but with an incredible taste. One pound of these frozen berries equals approximately 2 cups. For bulk quantities, one gallon is equivalent to 5 pounds. These berries can be used to make a variety of delicious treats such as shakes, pies, tarts, cobblers, and more, making them a versatile addition to your culinary creations. It is recommended to store them in the freezer to maintain their freshness.

It's important to understand that huckleberries primarily come from Oregon, Idaho, and Montana. If you are accustomed to huckleberries from different regions, you may notice differences in taste and appearance from what you've previously experienced. Nonetheless, our customers, both retail and wholesale, have expressed their love for our berries consistently.

Although there might be a few not fully ripe berries due to freezing them at their peak, the overall quality and taste are highly appreciated by our satisfied customers.

Regarding the huckleberries' little stems, rest assured that these stems are not noticeable in taste. Removing them would cause the berries to turn mushy, so they are left intact, having no negative impact on their use in various culinary applications.
