Pearl Street sources all of our caviars from farms (wild sturgeon is ILLEGAL in the USA as of 2007). We work exclusively with farms located on natural waterways with high water flow. This means the fish are exposed to the minerals and vitamins that sturgeon find in the wild. Rivers in high-elevation forests feed the lakes. We only harvest in cold-water months to maintain structure (firmness/pop) and flavor. Please note that the size of your wasabi roots may vary. Some roots may weigh approximately an ounce, while others can be 2 ounces or larger, with a few being slightly smaller. Occasionally, we may need to cut the root into pieces because our supplier sends us exceptionally large roots.

Beyond its traditional association with sushi or sashimi, wasabi offers an exceptional flavor profile that complements a diverse range of dishes. Try it with steak, oysters, white sauces like aioli or crème fraîche, mashed potatoes, salad dressings, and cold noodle dishes. It even adds a unique kick to Bloody Marys!

It's essential to know that most commonly served "wasabi" might just be horseradish mixed with green food dye. You may have yet to experience the true taste of fresh wasabi!

Fresh wasabi, much like salt and butter, serves as a flavor enhancer, contributing a vegetable flavor reminiscent of asparagus or artichoke hearts while providing a delightful heat that enhances other flavors.

At our farm, we harvest genuine, real wasabi rhizomes, leaves, and stems, available year-round, straight from the farm. The pristine coastal mountain stream water in which it grows gives our wasabi a clean taste, distinct from some imported varieties cultivated in soil. We offer the vegetable itself, not processed powder or paste, so its heat and flavor remain uncompromised.

For optimal freshness, your wasabi will last up to two weeks in the refrigerator. However, please be aware that there might be a waiting period of up to a week after your order before we can ship the wasabi, as we harvest it only once a week. If you need it urgently, feel free to call or email us to check for immediate availability.

To maintain the freshness of your wasabi, wrap it in a moist paper towel and change it every other day. It's crucial to grate the wasabi immediately before use, as its flavor diminishes after approximately half an hour once grated. However, this characteristic only affects the grated wasabi, not the root itself.

In case you notice any part of the root turning brown or black, simply trim it off and discard it; it will not affect the rest of the root.

For bulk quantities, one gallon is equivalent to 5 pounds. It is recommended to store them in the freezer to maintain their freshness.

It's important to understand that huckleberries primarily come from Oregon, Idaho, and Montana. If you are accustomed to huckleberries from different regions, you may notice differences in taste and appearance from what you've previously experienced. Nonetheless, our customers, both retail and wholesale, have expressed their love for our berries consistently.

Although there might be a few not fully ripe berries due to freezing them at their peak, the overall quality and taste are highly appreciated by our satisfied customers.

Regarding the huckleberries' little stems, rest assured that these stems are not noticeable in taste. Removing them would cause the berries to turn mushy, so they are left intact, having no negative impact on their use in various culinary applications.

Eva's Wild

This box contains 12 portions of flash-frozen, vacuum packed black cod fillets, approximately 6oz in size (+/- some minimal natural variation). 

Black cod, also known as sablefish, have a high-fat content that lends to their delicate, silky texture and buttery flavor. These fish are a favorite on the Japanese market and amongst seafood connoisseurs. They are packed with Omega-3s and other nutrients and minerals, such as iodine, phosphorus, magnesium, copper, iron, zinc and calcium. Thanks to being held at time and temperatures approved for eating raw, they are sushi grade. Our fishermen have to go deep to harvest this delicate fish - they're usually caught in depths of 1,000 - 9,000ft.

Our black cod is sustainably caught in the Prince William Sound (south central Alaska) by small boat fishermen with longlines or traps and it's strictly regulated by NOAA. The fish is processed and flash frozen immediately after catch to ensure maximum freshness. Flash freezing in vacuum pack preserves the nutrients, flavor, texture and all the other qualities in each portion until you're ready to eat it.

The story of Peconic Escargot begins in 2013. Taylor Knapp was working as a chef on the North Fork of Long Island and striving to source the restaurant's ingredients seasonally and locally. He wanted to create an escargot dish - something really special. He knew that escargot was available in cans and frozen, but was already going through such lengths to gather all his other ingredients fresh, from local sources.
