INGREDIENTS:

Golden Chanterelle Mushroom Soup
- 1 lb fresh golden chanterelle mushrooms
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh thyme for garnish (optional)

Preparation:

Step 1 - Prepare the mushrooms

Begin by cleaning your golden chanterelles carefully with a soft brush or damp cloth.

Chop the mushrooms into bite-sized pieces.

Step 2 - Prepare the onion and garlic

Peel and finely chop one large onion.

Mince three cloves of garlic.

Step 3 - Cook the onion and garlic

Start by heating two tablespoons of olive oil in a large pot over medium heat.

Add the chopped onions to the pot and sauté until they become translucent - around five minutes should do it.

Next up are those fragrant garlic cloves; add them in and cook for another minute until their aroma fills your kitchen.

Step 4 - Add the golden chanterelles

Now comes our star ingredient – add in those beautiful golden chanterelles! Cook them down until they're tender which usually takes about ten minutes on medium heat.

Step 5 - Pour in the broth

Pour four cups of vegetable broth into your pot along with salt and pepper according to taste preference; let everything simmer together for about twenty minutes so all those wonderful flavors can meld together beautifully.
